Enchiladas and Salad

CPW CSA member Sue shared her creation from our July 11 distribution:

Hi CPW CSA! Thought I’d share… This week’s box was amazing. I had a vegetarian chef come over for dinner knowing today was CSA day. After perusing my refrigerator, she made beet, va choi, onion, and chard enchiladas with a mega salad. She used green salsa, corn tortillas, and cheese in addition to the sautéed greens and caramelized onion from the farm. Was so yummy! We used the mizuna, raw beets, the green part of the onion in the salad. We added tomatoes, avocado, almonds, and cranberries to the salad. We used lime, olive oil, salt, and pepper for the dressing. Was SO good! I was so impressed (and now I know how to make enchiladas!)
